I'm interested in a few different sessions, Do I have to book more than one?

No.  The session names are more about helping you find what you're looking for.  If you want to combine senior and family photos into 1 full session, you can do that.  However if you think you need an hour for each, I would recommend booking separate sessions but it's entirely up to you.
